Tea Tales
Green tea with mint has enjoyed an important place in Moroccan tradition since the 18th century and has since spread across North Africa and Southern Spain. Dry tea is first ‘washed' with steaming water just as it is in China. Just as important in this ritual is the manner in which tea is poured from a suitable height into tiny glasses containing mint so as to aerate the brew, thus enlivening warm afternoons at the Kasbah.
