Tea Tales

The Chinese have scented their teas for centuries. Scenting tea with flowers can be a laborious process, but well worth the effort when it's done well using good tea. Fresh cut night blooming jasmine flowers, minus their stems and stalks, are strewn to cover warm green or oolong tea leaves spread a couple of inches deep. Another layer of tea then covers the top, and the process repeats until the tea/flower layers reach a height of two feet or so, and the blossoms are allowed to impart their scent. The petals may later be removed, or left in for a visually pleasing effect, for at the time of packing, the petals will have lost much of their fragrance. One part of Jasmine scented tea is added to about twenty parts unscented leaf to complete the process. The success of the scenting partly lies in not allowing the tea's distinctive flavour to be overpowered.
